Ingredients
Base:
250g Plain Flour
75g Self-Raising Flour
185g Unsalted Butter
75g Caster Sugar
2 Eggs
1 tsp Milk
Demerara Sugar for top
Filling:
8 Large Granny Smith Apples
1 Lemon (juice)
45g Unsalted Butter
110g Caster Sugar
1 tsp Ground Cinnamon
1/4 tsp Ground Cloves
Method
Step 1
Sift flour, add butter and rub together until fine particles. Stir in the sugar. Beat egg with 1 tsp cold water and pour over mixture. Mix together and divide into 2.
Step 2
Peel and core apples. Toss with lemon juice. Put butter and suger in frypan on medium heat. Add apples to melted butter with spices. Stir to coat. Cook for 10 minutes until apples soft. Allow to cool.
Step 3
Roll half of pastry and line into 22cm pie dish. Add filling. Roll top and lay over filling. Glaze with beaten egg.
Step 4
Trim excess pastry. Sprinkle with Demerara then bake at 180C for 45 minutes.
